I am a South African chocolatier, currently living in the picturesque town of Knysna on the Western Coast in The Garden Route. Chocolate has been teaching me to work with it for approximately 15 years – in fact the first chocolates I made by myself with Belgian couverture was in 2005 for my wedding. It might have been then that I fell in love with working with chocolate. The journey since then has been a long and very satisfying love affair.
Chocolate sculptural work and artistic creations is by far the most rewarding exercise for me. I love the challenge this medium gives me every time we create. I love the fact that chocolate couverture insists that I treat it with the utmost respect it deserves. When growing up and using the plastic molds my mother bought me (they were shapes of seashells), little did I know then that my life would end up like this – making more similar – in a professional capacity!
Chocolate aside, I have an amazing supportive husband and two beautiful children! I live a life doing what I love alongside a family who bring my heart joy daily.
The reason for starting this blog was simple – I simply must share my love of chocolate with everyone wishing to accept my offering. I believe that chocolate is a delicate ingredient – surely sent from the gods of everything beautiful and delicious – and that it needs to be respected and enjoyed. For this I insist on only using chocolate of the highest quality – couverture to be exact. I loathe the industry that has altered its integrity by adding things such as palm oil into it. I also believe that chocolate, when handled with care, can remain healthy and certainly always be not only delicious but look beautiful. I am an advocate of ‘healthy’ chocolate. This blog will be the platform to share all the healthy and beautiful ideas I have.
